Today, he is the chef and co-owner of Ever, a distinguished fine-dining restaurant in Chicago that has earned two Michelin stars, along with its cocktail-focused counterpart, After. How has your idea of perfection evolved over time?
To Duffy, perfection remains an elusive target. It is less about achieving a final state and more about striving for the subtle details that culminate in something extraordinary. The aspiration is to improve, even if slightly, each day in both personal and professional dimensions.
When creating a new dish, what do you prioritize? Flavor? Emotion?
The foremost priority is always the ingredient. Duffy emphasizes collaboration with farmers and foragers, drawing inspiration from the freshest local produce. If English peas featured in last year’s menu, any new dish must diverge significantly, embodying his philosophy of continual renewal.

Is it challenging to balance consistency and creativity at the Michelin level?
Duffy maintains that his focus is not on Michelin stars. He crafts cuisine for personal satisfaction. If he loves a dish, he is confident that it will resonate with others too. The stars naturally follow from this authenticity.
You’ve indicated cooking is emotional. Do you still pursue emotion, or is it solely ingredient-focused now?
It involves both aspects. Duffy refers to his culinary style as “personality cuisine,” emphasizing a passion for seasonal ingredients. The emotional bond persists; it’s about the flavors, narratives, and memories they evoke.

Your plating is highly artistic. Does it stem from an artistic background?
Duffy credits his father, a tattoo artist, as a significant influence. Although he engaged in some sketching and painting in his youth, he never formally studied art. Over the years, he has cultivated his unique style concerning how dishes should appear and be enjoyed.
You have tattoos from your father. What significance do they hold for you?
These tattoos are particularly meaningful to him, serving as lasting reminders of his father. Duffy sees them as a form of therapy—painful yet deeply significant.

Fireproof encapsulates the essence of resilience, exploring the challenges that most would find insurmountable yet choosing to evolve and embrace life. The memoir provides a deeper exploration than the documentary For Grace, covering everything from a childhood spent in a closet to joyful moments shared with his father, documenting a range of experiences—both dark and uplifting.
What contributes to your resilience?
Paradoxically, Duffy attributes his strength to his parents. Despite a difficult upbringing, they exemplified hard work through multiple jobs. This shared determination instilled in him an aspiration for a brighter future, pushing him away from a lifestyle he did not want.

How do you envision your legacy?

Is the naming of your restaurants Ever and After a nod toward a fairytale ending, reflecting your life experiences?
Although it may not have been a conscious choice, Duffy acknowledges a possible subconscious connection. The intent was for the restaurant experience to feel unparalleled for guests, and in hindsight, he sees how these names could also represent his pursuit of a happy ending through hard work and dedication.
So, is Ever your version of a happy ending?
Possibly. The original intent was to create an unforgettable experience for diners, which could now also reflect Duffy’s own evolving definition of fulfillment. The journey continues, with future goals always in sight, underscoring that the process of building something substantial may ultimately be the true objective.
