The evening commenced in the lobby of 830 Brickell, where a personal host provided a warm welcome and guided me to the elevators—an understated gesture that set a refined tone for the experience. Upon exiting, the atmosphere unfolded like a private gallery, with museum-quality artwork by renowned contemporary artists like Andy Warhol and Damien Hirst creating a striking dialogue between art, architecture, and hospitality.
Seia’s dining philosophy reinvents Italian culinary traditions, focusing on bold flavors and seasonal ingredients. This results in a menu that feels both timeless and refreshingly modern.
Seated at a table garnished with the finest Christofle cutlery, the first course featured freshly baked focaccia, followed by a beautifully plated vitello tonnato that showcased tender veal with a delicate tuna sauce, pickled red onions, capers, and subtle croutons. The charcoal-grilled carciofo alla brace brought vibrant herb oil and lemon, blending smoke with freshness perfectly.

The bar program also impresses, particularly with the L’Ora D’Oro, a sophisticated take on the classic dirty martini enhanced by smoked olive brine and citrus bitters, revealing a depth that is both elegant and lively.
Other delectable menu items include the carpaccio di gamberi rossi, which features prized Mazara red prawns drizzled with limoncello vinaigrette, reflecting Seia’s commitment to unearthing remarkable ingredients.
The main courses showcased perfectly executed pasta dishes, from rigatoni al pomodoro made with datterini tomatoes from Vesuvio, Brazil, to tortelloni alla napoletana filled with braised short rib and finished with sage butter. The risotto al tartufo was topped with freshly shaved black truffle, while the pan-seared Mediterranean branzino, accompanied by eggplant and cherry tomatoes, offered a lighter yet refined touch. Dessert concluded with a tiramisu layered with mascarpone mousse and espresso-soaked ladyfingers.
