Oenophiles, a new destination awaits in Burgundy, the heart of Chardonnay production.
The Fontenille Collection has recently unveiled its first property in this iconic wine region. The Château de Cîteaux, set in a renovated 19th-century château, is less than three hours from Paris and offers an ideal base for exploring Burgundy’s renowned vineyards.
The hotel has a rich history that extends back to 1098, when Robert de Molesme established the Cistercian order nearby. The monks, supported by the dukes of Burgundy, cultivated vineyards in Meursault’s Vieux-Clos, crafting the cellars that have survived to this day. Architect Jules Bernard later constructed the current building over these 12th-century foundations. Notably, ninth-generation Meursault vintner Philippe Bouzerau once owned the site, and his wines are available at the hotel.

Guests of Château de Cîteaux can choose from 35 accommodations, with 18 available now and an additional 17 planned for late 2027. The design reflects the Second Empire style with notable features such as torsade columns, subtle greens, terra-cotta accents, and intricate stonework. Rooms are also designed in the spirit of the Barbizon School, offering private terraces with views overlooking the Côte de Beaune. Local artisans, including Leblond Père et Fils, have contributed custom woodwork to enhance the hotel’s character.
The Château is home to impressive restored artwork and frescoes, courtesy of conservator Alice Gardien. The hotel’s restaurant, Célestine, features bright, airy murals, including cherubs floating in clouds on the ceiling, a tribute to the owner’s daughter. Here, chef Christophe Vauthier crafts a seasonal menu with local cheeses, river fish, Bresse poultry, and fresh produce. Guests can also sample Bouzereau’s wines alongside other local appellations.

Fontenille Collection offers various activities for guests. Options include vineyard picnics, tastings with local winemakers, and a harvest event with Bouzereau from August to September. Explorations of the historic 12th-century Cistercian cellars will be available in September, while the spa features treatments inspired by the monks’ apothecary. Additional amenities include a heated indoor pool, a Jacuzzi, and a sauna. Guests can also venture to nearby historical sites like Beaune, the capital of Burgundy wine, and Pommard.

The opening of Château de Cîteaux reflects Fontenille Collection’s commitment to highlighting its historical connection to winemaking and the elegance of the 19th-century. The CEO, Linda Hazi, remarked that this property not only represents their first presence in Burgundy but also marks a significant milestone in their ten-year journey.
Rates for accommodations at Château de Cîteaux begin at approximately $440 (380 euros) per night.
